and the process
dōp Pizza is a mobile pizzeria specializing in wood-fired, Neapolitan pizzas to best serve the DMV! Our philosophy is to use the best of tradition and modernity to put forward the dōpest pizza we can. Wood-fired, quality inspired.
D.O.P. stands for the Denominazione di Origine Protetta or Protected Designation of Origin (P.O.D.) in English. It is a label assigned by the European Union to indicate that products, such as meats, cheeses, oils, vinegars, wines, and agricultural goods are crafted or produced in a specific geographical area characteristic of its place of origin. In other words, they are authentic!
We use 100% Italian imported, Caputo 00 flour and ferment our dough for 48 hours to unlock the flavors and characteristics of the leavening and fermentation processes. This results in a light and airy crust with a tang. We then top our pizzas with sauces and ingredients that are procured from some of the best producers in the industry and prepared from scratch using chef driven technique. Finally, all pizzas are cooked in an 800° F, wood-fired oven for less than 2 minutes to produce rise and the lovely, leopard spotting; representative of a Neapolitan pizza.
